A wonderful patient of mine brought me a bag of garden fresh veggies as a thank you for her good surgery outcome. How amazing is that? To show my appreciation, I made a salad recipe up!
1/2 lb fresh green beans chopped to about 1/2 inch pieces
1/2lb fresh snap peas chopped to about 1/2 inch pieces
2 cloves garlic
1 cup of cherry tomatoes thinly sliced
1 shallot thinly sliced
1/4 cup fresh chopped basil
1/4 cup fresh chopped parsley
1 tsp salt
1 tsp pepper
zest of 1 lemon
2T. lemon juice
1/2 cup olive oil
1/4 cup aged balsamic
1 ball of burrata
Combine the veggies and toss. In a blender, add olive oil, balsamic, lemon zest, lemon juice, salt, pepper and herbs and blending until smooth. Toss with the bean mix.
Make a circle with the salad on a platter and place the burrata in the center. make a small cut in the burrata and add final splash of dressing and a sprinkle of truffle salt.
