​the new year lucky treat that most people go out to get, kind of like Peking duck. 

It’s worth the wait


6-8#pork shoulder

1 cup brown sugar

1 cup salt


Cut off some  hard fat from the cap first. Rub the shoulder with the sugar and salt mixture and wrap in plastic wrap. Sit overnight in a cool area or fridge. 


Heat oven to 300 the next day. Brush off excess rub and place in roasting pan for 6-7 hours, basting frequently. At 6 hours, the meat should fall apart with a fork.


Ginger and scallion sauces:

2 cups of chopped scallions

Large piece of ginger, peeled and minced 

2 T sesame oil

1/2 cup grape seed oil

2 tsp. Soy sauce 

1 tsp gochujang powder


Combine, whisk and cool


Spicy gochujang sauce

2 T ssamjang paste

1 T gochujang paste

1 tsp smoked paprika

1/2 cup grape seed oil

3 T rice vinegar 


Combine and rest


Cucumber salad

2 cups diced cucumber

1 diced avocado

1 bunch scallions chopped

1/2 cup cashew

1tsp fish sauce

1 T soy sauce 

1 tsp chili crunch


Combine and chill


Cabbage salad

1/2 head purple cabbage chopped

2 T. Sesame oil

1/2 cup rice vinegar

1/4 cup canola oil 

1 T minced ginger

1 T. Sugar


Mix and chill for several hours 


Oysters 🦪 if desired


Lots of sticky white rice
