spring pappradelle

​1 lb fresh pappradelle 

1/2 cup pancetta diced

4 cloves garlic

4 cloves roasted garlic

Zest of a lemon

Juice of a lemon

1/4 c mint

1/2 c fresh basil

1/2 cup fresh parsley 

1/4 c olive oil

1/4 c white wine

Salt and pepper

1/2 cup ricotta

1 cup shelled fava beans


Mince herbs, garlic, oil and lemon juice/zest together. Pan fry pancetta until browned in a large pan. Add the oil mixture and stir on low for a couple minutes. Add wine and ricotta for 2 minutes stirring all the time. Add fava. Salt and pepper to taste!
