peas are awesome. All year long you can grow them and they thrive indoors. The shoots are fair game and make the salads have a fun texture.
It’s not summer anymore but here we have it
1 lb spring snap peas
1 cup shoot
1 clove garlic
1 tablespoon minced basil
1/2 cup pine nuts
1/2 cup cotija cheese
1:4 cup olive oil
2 T. Balsamic
1 T aged balsamic
1tsp truffle oil
1 T lemon zest minced
That’s it y’all. I recommend whisking the oil, balsamic and zest prior to adding it
