On the last day in Italy, we had a beautiful pool day. And, we realized that we bought WAY too much charcuterie and other items and couldn't take them with. So, here is a stew that is sort of what I did, never to be reproduced, but maybe it will be close.
2lb florentine steak cubed
bones from above steak
1/2 lb cubed braesola
1/2 lb cubed sopressata
you can't get this but 1 cup of stewed tuscan tripe in a sweet tomato sauce
1 head of garlic, minced
2 onions minced
2 cups of sliced olives of any kind
8oz of chopped mushrooms
3 cups of chopped fresh cherry tomato
1 cup chopped basil
1 cup shredded aged pecorino
1/2 cup olive oil
1 bottle of cheap chianti
2 T aged balsamic
1 loaf stale bread
Heat up 1/2 the oil and add the garlic, 1 onion, all the meats into a large stew pot. Brown the meat on all sides for about 10 minutes. Add the wine, balsamic and cover. Simmer for 2 hours.
Pick out all the meat and set aside. Strain the remaining braising liquid and add several pieces of the stale bread, stirring until it acts as a thickener for the sauce.
In a separate pot, rest of the olive oil, tomato, mushroom, olives, and basil and simmer for another 10 minutes. Add the meat back to this bowl. Once incorporated, spoon the braising liquid, now thickened, back into the pot, adding more stale bread if it isn't thick enough. Salt and pepper to taste. Top with pecorino and any other cheese left over. Serve with not stale bread or maybe orzo if you wanted?
