smoked Turkey pot pie

​3 cups diced smoked Turkey

2 large diced carrots

1 large diced onion

2 diced stalks celery

2 T butter

1/2 cup green peas

1-2 cups Turkey stock

3-4 tablespoons flour

1/2 cup minced parsley 

1 tsp thyme leaves

1 tsp fresh oregano

1/4 tsp turmeric

Salt and pepper 

(If you like taters in your pot pie, have 2 cups of cooked skinless diced potatoes for mix as well)

2 pie crusts

Preheat oven to 375.

Sauté veggies and butter until translucent onions. Add herbs. Add Turkey and continue to simmer for several minutes. Add stock and simmer for an additional 5 minutes. Slowly sprinkle flour in as you whisk until the sauce is thick but not pasty. If it gets pasty add more stock. 

Salt and pepper to taste. 

In a greased pie pan, lay out one crust and bake for 5 minutes. Remove and add your filling. Fit the other pie dough on top and cinch the edges. Make a few cuts in the top and a pretty pattern. 

I also like to spritz a little olive oil and pepper on the top. 


Bake for 30 minutes until golden.
