I got a smoked and regular turkey this year which was great for variety but lots of vacuum packed bags of meat in the freezer now. For the rest, I boiled down the smoked turkey to make basic stock and stripped all remaining meat to start. If you don’t have smoked turkey, regular or chicken is fine for the stock and the meat.
Of note this is an update from a 2017 recipe that I think is better this way 😂
6 cups smoked turkey stock, salt and pepper to taste
2 carrots diced
2 celery diced
1 onion diced
1 large parsnip diced
3 minced garlic cloves
2 T. Olive oil
8oz mushrooms thin slice
Corn if it’s leftover
3cups of chopped smoked turkey cubes
fistful of parsley minced
1 tsp thyme leaves
2 leaves of sage
16 Oz can great northern beans
Salt and pepper to taste
This is super easy. First, pour a dram of scotch, your choice, to sip during this process.
Sauté the veggies except shroom with 2 T olive oil until translucent onions. Add mushrooms and turkey as well and simmer for 5 minutes with the veg.
Add the herbs, salt and pepper. Transfer to slow cooker and add the broth. Simmer on low for 3-4 hours and add northern beans with about 30 to go.
Allow to rest.
Serve with creme fraiche and crusty bread if desired.
