1 green papaya julienned
1 cucumber julienned
1 cup snap peas julienned lengthwise
Handful finely chopped cilantro
Handful finely chopped Thai basil
1/2 lime
2 tsp fish sauce
1/4 cup mirin
1/4 cup rice vinegar
1 tsp chili crunch
Combine all ingredients and toss. You can add cashews if you’d like or a little fried garlic. Allow to sit in the dressing for 30+ minutes before you serve
