smoked pork shoulder

​4 lb pork shoulder, dressed

1/2 cup salt

1/4 cup pepper

1/4 cup brown sugar

1/2 tsp smoked paprika

1 tsp ground cayenne

1tsp ground mustard


Mix herbs and seasonings and rub the crap out of the pork. Wrap in foil for a few hours to overnight.

Set smoker up with applewood chips at 275 to start. Place tray with apple cider vinegar inside the smoker and don’t let it run dry. 

Smoke at 275 for 90 minutes then lower temp to 225 for an additional 7-8 hours until internal temp is 190. You can wrap the meat in meat paper for the last hour if desired.
