potato pancakes

​3 large potatoes skinned and chopped into chunks

1/2 stick butter

4 cloves garlic

1 small onion

2 sprigs dill

2 sprigs parsley

1 block cream cheese

4 T flour

2 eggs

Salt and pepper

1/4 cup grated cheddar


Boil potatoes to 7 minutes. Cool. 

Add rest to a blender and blend to smooth. Add potato. Fold in cheddar 


Heat 2 inches grape seed oil in frying pan. Drop pancakes in by 2 T apiece and fry on both sides.

Drain and serve with dill and sour cream or even better burrata.
