honey baked cauliflower (adapted from my Greek table)

1 head cauliflower

1/4c olive oil

4 cloves sliced garlic. 

2 T raw honey

3T. Dijon mustard

1/4cup chopped parsley

1/4 feta crumbles

1T. Lemon marmalade 

Lemon slices

Trim stem so cauliflower sits upright. Heat oven to 400.

Stick garlic slices between florets. Mix mustard honey and oil and slather on the cauliflower. Bake for 40 minutes. 

Mix marmalade, feta, and parsley and spread on the baked cauliflower. Bake another 10-15 minutes. Squeeze lemon on top to serve.
