For Abby :-) my neighbor inspired me to play with the concept of a feta ball. Add more stuff and have fun with it.
8oz cream cheese
4oz. Marscapone
8oz creamy feta variety
As much olive oil as you want
1T. Za’atar seasoning
2T. Honey
1 tsp minced lime zest
1/2c pine nuts
Handful Minced fresh parsley
pita points
extra honey
with a hand blender, add cheeses and a splash of olive oil to combine. Add zaatar, honey, lime, parsley and pine nuts and fold in. Make a ball and plop in a bowl. Drizzle with more olive oil and honey.
I did a version last night with chopped figs for a solo dinner too and it was amazing.
