tomato pie with 3 cheeses

3 large tomatoes thinly sliced

3 cloves garlic 

1/2 cup chopped basil

3T olive oil

2 oz Boursin cheese

2tsp Dijon mustard

1 small peeled eggplant cut into thin slices

herbs de provence

1/2 cup parm shred

1/2 cup mozzarella shredded

pie crust


pre bake pie crust at 350 for ten minutes in pie pan.

increase heat to 375


layer the tomato, basil, eggplant and then bourdain mixed with the mustard and minced garlic in the middle. Apply a second layer of tomato and basil. Top with shredded cheeses. Drizzle olive oil. Bake for 25 mins
