garlic based Patagonia style sauce

6 crushed cloves garlic

1 bunch of cilantro

1/2 cup fresh parsley 

1tsp mustard powder

1tsp salt

20 super chili’s (jalapeño or Serrano works)

1T honey

3 tomatillos

1 tomato

Juice of one lime

1c water

1c vinegar (white)

1/4 c red wine vinegar



blend all in a food processor until almost a paste starting with the solid ingredients and adding liquid slowly. 

Place in a fermenting jar in a cool place for one week. 


Strain any particulates with cheesecloth after fermentation. Add 1/2 cup minced cilantro and 1 more clove garlic minced at the end
