2 lb chicken thighs
2 clove garlic minced
1/2 tsp cayenne powder
1/2 tap smoked paprika
if you have it, diced jalapeño
2 T honey
2 sprigs thyme
1/4 c parsley
6oz feta crubles
2 lemons
olive oil
rub chic with salt and pepper first and be generous
combine remainder of ingredients in a vacuum bag except feta, lemon, and oil and place chicken in there. Seal and marinate overnight.
Spread chicken out on a cooking sheet and sprinkle generously with olive oil. Slice and squeeze 2 lemons over the pan and stick lemons in between pieces. Bake at 425 for 30 minutes. Toss and cook another 10.
Once out of the oven, toss in the crumbles and a bit more oil and serve. I did grilled eggplant on the side but I can imagine any grain or good bread to sop up that juice would be fabulous
