I’m not kidding. Guys. This is the best cauliflower ever.
1 head cauliflower broken into florets
2 cloves crushed garlic
2 T. Unsalted butter
2 T. Capers
1/4 cup raisins
1 twirl of lemon zest
sous vide at 185 for 30 minutes in vacuum bag. When finished, immediately transfer bag contents to a hot skillet with 1 T olive oil. Sauté until a bit of brown on the cauliflower edges.
This is adapted from my Sous vide cookbook to make it more kid friendly because that one had anchovies in the base (which I love) and I thought the zest would be a nice addition.
