🍜 The Ramen
Noodles: make your own vs. get the bag at the grocery. Obviously homemade is better and, also, a lot more work. If you want to make your noodles, you need a basic dough, roller and a pasta maker like this:
Basic dough:
4cups 00 flour
1tsp baking soda
1 egg
1 tsp salt
water
Combine all ingredients other than water and mix with hands only. Knead the dough and add teaspoons at a time of the water. The final consistency should be similar to pizza dough, but a bit more granular.
Once the dough is kneaded enough to 'bounce back' when you stick a finger print on it, wrap tightly in saran wrap and refrigerate for 45 minutes mininum.
Allow to return to room temp to roll. With a rolling pin, roll the ball out into a long sheet and portion it. Sprinkle with semolina to prevent stickiness. Roll with the pasta maker to a #2 thinness and then use spaghetti cutter to finish the job.
Korean bbq sauce (really the bottle is ok)
veggie oil
smoked paprika
1/4 cup soy
Pound the pork slices thin. Roll like a pinwheel. Marinade overnight then bake at 350 for 45 minutes with the marinade.
The rest of the goodies
DashiBlack garlic oil
white corn
pickled bamboo shoots
scallions
stewed mushrooms
julienned carrots
fish balls
Composition: The noodles should be cooked for less than two minutes in salty water.
Pour broth. Add dashi for salt content to taste. Place noodles, then BBQ pork. arrange remainder of desired items around the edge for presentation.
