Brussels with spanish ham and citrus compote

 
Brussel Sprouts are awesome. So may ways to prepare and they grow on a funky beanstalk looking thing.  They are super high in vitamins as well. Ok, so fine...I always add something not as healthy to them, but who doesn't love a nice gooey crunchy sprout

1/3 cup diced spanish ham

2 cloves garlic

3 T olive oil

3 cups of chopped brussels

1/2 an orange worth of juice

2tsp orange zest

squeeze of lemon

1T. orange marmalade


Place oil and garlic in the pan and simmer. Add the ham and cook until crispy. Add the brussels and allow this to cook on medium until the brussels get a bit browned. Add the juice, zest and marmalade and cover for 15 minutes.

Sprinkling a little pecorino on this really finishes it off.  It is meant as a side, but I could eat it as the whole meal.
