Risotto is actually easy once you get a hang of it. Sauté, brown rice, add broth, pressure cook x6 minutes

8oz lobster meat chopped
4 oz squid tubes chopped
2 cloves crushed garlic
1/2 cup chopped shroom
1/2 cup chopped fresh green bean
1/2 cup chopped tomato
1cup risotto rice
1/4 cup half and half
2 T butter
2cups water
1 cup veg broth
1/4 cup cream cheese
1/4 cup pecorino
Salt, pepper
Parsley
Butter and all veggies sauté, then add seafood. Once simmered, add rice and brown for 5 mins. Add all broths and cheese.
Pressure cook 6mins until risotto cooked and slightly soupy. Allow to cook lid off to thicken for 3 minutes. Add salt pepper and parsley and maybe a splash of
