Smoked Turkey, great northern, and barley stew



I got a smoked and regular turkey this year which was great for variety but lots of vacuum packed bags of meat in the freezer now. For the  rest, I boiled down  the smoked turkey to make basic stock and stripped all remaining meat to start

8 cups smoked turkey stock, salt and pepper to taste
2 carrots
2 celery
1 onion
8oz mushrooms
1 clove garlic
2 cups of chopped smoked turkey cubes
fistful of parsley
2 leaves of sage
3/4 cup dry northern beans
3/4 cup dry barley

This is super easy. First, pour a dram of scotch, your choice, to sip during this process.

Boil the stock. Add the mirepoix and boil until soft. Add mushrooms and turkey as well. Boil for 30 minutes.  Add dry northern beans and cook on simmer for 2-3 hours until cooked.  Add barley about 20 minutes before the end of the bean boil.
Allow to rest.
Serve with creme fraiche and crusty bread if desired.
