Amazing spicy rice noodles with crispy spinach

Had some random ingredients in the fridge and was too lazy to go out, so this is what happened!

1/2 pack wide rice noodles
3T. coconut oil
2T. garlic
2cups spinach leaves
6oz. miyatake shrooms
1/2tsp fresh ground ginger root
1T. spicy satay paste
1T. sesame paste
1/4c. chicken broth
handful of fried shallot bits (Filipino section of store)

Heat coconut oil in wok and add spinach, garlic and shrooms. Sautee until spinach is crispy on the edges. Pour out residual oil. 

Add ginger root, satay paste, sesame paste, and broth and simmer until slightly viscous (shiny looking). Add shallots

In a separate pot, boil rice noodles by direction and drain. Toss with the veggie mixture. Squeeze of lemon and cilantro on top!
