Vietnam was amazing. The scenery, the people, the food. I was completely obsessed with the salads while there though. I got a few books but thought I should give one a whirl myself based on what I learned in cooking class with things from my garden.
You need a mandoline for this...
2 large carrots
8 large radishes
1 can whole water chestnuts
1 small onion
1/2 zucchini
1 large poblano or medium heat pepper
green mango if you can find it (I got lucky)
1/2 cup cashews
1/4 cup craisins
1/2 cup cilantro, finely chopped
1/2 cup basil leaves, finely chopped
1/2 lime
2 sprigs of mint
1/4 cup rice vinegar
1/4 cup sesame oil
1/8 cup soy sauce
1 tsp. white sugar
1T. fish sauce
2T. sriracha
pepper to taste
1tsp sesame seeds
radish sprouts
All of the veg should be julienned with the mandoline. Toss with cashew and craisins, cilantro and basil. Muddle the mint with the lime juice. Add oil, vinegar, fish sauce, soy sauce, sugar, and sriracha. Toss well.
Place lettuce at base of serving platter. I had some udon noodles that I placed over that, then a scoop of the salad. Add meat of choice if you need the protein (I did diced chicken). Top with radish sprouts and sesame seeds
