horseradish mashed taters

5 lb. potatoes, peeled and quartered
4T. butter
1/4cup horseradish
1tsp black pepper
1tsp salt
1cup of 1/2 and 1/2
1/2 cup milk
1tsp. truffle oil
1tsp. fresh thyme

Boil potatoes until soft and cool.  melt butter in microwave and add potatoes and butter to a mixer with mashing attachment..  Add salt, pepper, and horseradish.  While mixing, add 1/2 and 1/2, 1/2 cup milk until smooth.  Return to large pot.  Reheat with truffle oil and thyme and serve.
