Christmas dinner revealed
10 slices bacon
7lb pork tenderloin
12 oz. dark beer
1/2 cup dijon mustard
1/4 cup honey
1tsp salt
1/2 tsp. pepper
2 T. fresh rosemary
1T. fresh thyme
1/4 cup balsamic
Combine beer to balsamic in deep pan and add tenderloin. Flip occasionally and marinate overnight. Remove from marinade and cover top in bacon. Place in large roasting pan with carrots, celery and onion in the bottom. Roast at 350 for 3 hours, occasionally adding 1/4 cup water to bottom for gravy. Cover with foil for first 2 hours.
