1 tomato (yellow if possible)
1/2 onion
1 diced zucchini
1 large mozzerella ball
2T. pesto
2 eggs
1 cornmeal pie shell
1tsp. thyme
1tsp salt
1/2tsp pepper
1 serrano pepper diced
Preheat oven to 400.
In a saute pain, heat 1T. olive oil and add onions. Cook until translucent. Add zucchini, tomatoes, and serrano pepper and saute on medium heat for about 5 minutes. Add to pie shell. Whisk two eggs, thyme, salt and pepper and pour over veggies. Layer the mozzarella on top and drizzle the pesto. Cook for 25 minutes. Cool before serving.
