chicken harvest stew with white northern beans

2 chicken breasts
1tsp salt
1/2 tsp pepper
bunch of herbs in a teabag (I usually put rosemary/sage)

2T of crushed garlic
1 onion diced
2 slices salt pork, diced
1 carrot chopped
4 tomatoes diced
1 16oz can great northern beans
1 cup diced acorn squash
1 zucchini diced
1 yellow squash diced
1tsp black pepper
2cups chicken broth from above

First boil the chicken breast in 3 cups water with the salt, pepper and bag of herbs. Cool chicken and dice it up.

In a dutch oven, add crushed garlic, salt pork, onion, and carrot.  Saute on medium until onions translucent. Add chicken and tomatoes and simmer for 15 minutes.  Add broth, zucchini/squashes.  Cook covered for 30 minutes. Add northern beans, simmer on medium for another 15 minutes, then add pepper to taste.

Serve with crusty bread and a merlot...
