sausage garden stew

So, I have a really fabulous garden right now but unfortunately have too much of everything so it is time to start cooking and freezing.  I just made this stew up this am and it is surprisingly good so give it a whirl

4 links of chicken sausage (the one I used had roasted garlic and spinach in it)
3 cloves crushed garlic
1 onion diced
1 green pepper diced
2 hungarian wax peppers chopped
3 cups chopped swiss chard
1 carrot chopped
1 16 oz can garbanzo beans
1 cup orzo
2 cups chicken stock
1/3 cup cheap white wine
1 bunch fresh herbs (rosemary, texas tarragon, parsley, and basil is what I had available)
1/4 cup olive oil
1 tsp salt

Heat oil in bottom of dutch oven and add garlic, onion, peppers, and cook until translucent onions. Add chopped sausage and cook thoroughly.  Add 1-2T flour to thicken. Add wine, stock. simmer to near boil for 15 minutes. Add herbs, chard and cook until wilted.  Add carrots and garbanzos.  Cook on low for 1 hour. Turn heat off and add orzo and salt (pasta will cook after heat is off).
Serve with crusty bread!
