My BF is really missing out due to a late night at work. This is fabulous. I was going to post a picture of me stuffing my face, but figured that wouldn't be cool.
1T crushed garlic
2T minced fresh basil
2T. balsamic vinegar
1 kaffir lime leaf
1/2 tsp salt
1/4 cup OJ
1 sheet puff pastry
For the salmon, marinade in all of those goodies for several hours. Next preheat oven to 350. Sear salmon with skin up to the burner for 5 minutes then remove. Flip it skin down and wrap the puff pastry over the top. Drizzle with EVOO and bake for 20 minutes.
Mustard Greens:
1 bunch greens, stems trimmed
1T garlic
1tsp brown sugar
1T balsamic
1/4c. chicken broth
Saute your garlic and add the greens for 3 minutes on medium. Add sugar, balsamic and chicken broth and cover for 10 minutes until nice and wilty.
Serve your salmon over a bed of greens (couscous on the side is lovely too.)
