orange chicken tagine

I saw Jamie Oliver do some random tagine on a show once, so therefore I believe I know how.


1lb diced chicken breast
1 diced onion
5 minced cloves garlic
1 yellow pepper in thin slices
1/2 cup chicken broth
2 carrots chopped into bite-size pieces
2 oranges in wedges
1/2 tsp of black pepper, cumin seed, coriander seed, garam masala, tarragon, garlic, cardomom seeds, lime zest
2tsp. salt

Place chicken with all those herbs in a bag and allow to marinate for several hours.  Place onion, garlic, and chicken and broth in tagine and cook at 350 for 1 hour until chicken thoroughly cooked.  Add , peppers, oranges, and carrots, along with the salt.  Cook for another 3 hours at 300 until carrots soft.
Serve over pearled couscous
