1 bag whole wheat spinach raviolis (Whole Foods)
2 fancy turkey sausages (sundried tomato is nice)
2T. butter
1-2T. flour
1/2 onion
2 stalks celery
2T crushed garlic
3 baby carrots
1 medium tomato
1 can spinach (drained like crazy)
1/2 cup white wine
1/2 cup chicken broth

In a food processor, blend onion, celery, garlic and carrots until thick puree. Place butter in saute pan and add food processor mixture when hot. Saute for about 3 minutes. Add flour to make your roux. Slowly add back broth and wine and whisk to be nice and smooth. dice your tomato and toss it in. Finally, dice your sausage and add that. Allow to simmer for about 20 minutes and add salt and pepper to taste.
Boil a large pot of water. Cook ravioli briefly (2-3minutes) and strain. Layer sauce, spinach and raviolis and top with parm. Bake for 30 minutes at 400
