This is a modification of my mom's recipe...pretty tasty stuff
2 chicken breasts
1tsp salt
2cups broccoli florets
4T butter
3 cloves crushed garlic
1/2 onion diced
3T unbleached flour
1cup chicken broth
1tsp salt
1tsp pepper
1 16oz bag egg noodles, cooked just barely al dente
1cup shredded swiss cheese
Boil chicken in salt and reserve broth. Once cooled, shred chicken.
Steam broccoli for about 4 minutes until bright green.
Next saute garlic in butter and add onion. Once translucent, add flour to make the roux and whisk until homogenous. Whisking constantly, add salt, pepper, and broth slowly to make a silky sauce.
Place egg noodles in a large casserole dish and mix with broccoli and chicken.
Pour sauce over the top, top with swiss cheese and bake at 350 for 30 minutes until cheese is bubbly and brown.
