mediterranean quinoa salad



quinoa is a lovely south american grain that has
a super cute curl at the top.  Comes in red, white,
or black.



1 1/2 cups quinoa
3 cups vegetable broth
1T crushed garlic
3 chopped scallions
1/3 cup chopped kalamata olives
1 can chopped artichoke hearts
1cup grape tomatoes cut in half
8oz chickpeas, rinsed

Dressing
1/3c. balsamic vinegar
1/4c. evoo
1/4c. chopped parsley
1/4c. chopped basil
1 sprig mint, muddled

                                                                                Cook the quinoa in the broth until fluffy.  Cool.  In a large bowl, mix garlic, scallions, olives, artichoke hearts, tomatoes and chickpeas.  Toss then add the quinoa.  Mix the dressing separately and toss just before serving.   I like to serve it over chopped arugula...up to you
