pancit canton...

2T. minced garlic

Ok, so I am trying to perfect pancit canton...a wonderful Filipino noodle dish that has eluded me.  I am going to make it this way this weekend after some blundered attempts.
For all my pacific islander friends, please comment as to it's validity...

1/2 diced onion
1 cup of thinly sliced pork (cooked) this is about 1-2 boneless chops
1 cup small shrimp, deveined
1 cup diced chicken breast
1cup julienned snow peas
1/2 cup diced carrot
1cup celery diced
1cup chopped baby bok choy
2quarts of chicken broth
1/4 cup soy sauce
fish sauce to taste
1 package pancit noodles (chinese flour noodle)

Heat a few tablespoons of oil and add garlic and onion, followed by pork.  Toss for a few minutes.  Add 1/2 chicken broth, chicken, shrimp, carrott, celery, bok choy, and snow peas and stir for about 10 minutes on medium heat.  Add rest of broth and the noodles.  Stir until the noodles absorb the broth.  add soy and a few shakes of fish sauce.  I like to top this with either pork rinds or french fried onion straws. Squeeze some lime on it too...omg. drool
