The UGLIeST fish ever, but o' so tasty. |
1lb monkfish
1/2 cup coconut milk
2T. soy sauce
1T. crushed ginger
1T. garlic
2T. mango puree or juice
Marinade 1 lb fish in all of the above overnight.
For cooking you can broil, bake, or simmer in another cup of lite cococut milk mixed with a cup of veggie broth until it nearly falls apart.
Super light dish and should be served with things like soba noodles or sticky rice and veggies. And sake of course.
