This is a highly variable recipe but is great if you have leftover BBQ materials. Feel free to adjust with your favorite leftovers but here goes
1 pan of Trader Joes cornbread (It is the best premade stuff)
1 container of Trader Joes Pulled Pork or 1 lb of your own (in BBQ sauce)
1 can collard greens, drained
1/2 onion, diced
1 egg
1 can corn, drained
2 cups shredded cheddar
2 handfuls of french fried onions
Hot sauce to taste
Crumble the cornbread in a 9x13 casserole dish and add egg and incorporate. Saute onion in saucepan and add to the cornbread. Arrange on the bottom of the pan like a crust. Layer pulled pork on top of this, then collard greens, then corn, then cheese, then fried onions. Bake at 400 for 30 minutes. Serve with Lipitor.
