This is a pasta sauce that I concocted last weekend after downing a bottle of champagne with my mom...needless to say it isn't difficult because even with compromised dexterity, it still turned out great.

2T. crushed garlic
1/4 diced onion
2T. pesto (canned, homemade, whatevs)
3 turkey sausages (I used sundried tomato in this case) sliced thin
1 anchovy in oil
2cups of baby tomatoes cut in half
1 cup sliced shrooms (baby bellas worked well)
1/2 cup of chicken broth
1/2 cup of white wine
handful of fresh parsely
handful of fresh basil
Gnocchi
In a large saucepan, saute garlic and onion in a little oil. Add sausages and toss for a minute. Add pesto and anchovy and toss for a minute. Add baby tomato and shroom and cover for 5 minutes until starting to spill juice. Add chicken broth and wine and recover for another 5 minutes on medium heat. Chop your fresh herbs and add about a minute before serving. I also like to add a few handfuls of cubed mozzarella at the end . Serve over gnocchi or whatever other easy to use pasta you have.
