polenta cakes with roasted tomatoes and goat brie

So, I found a new grocery store with an amazing cheese section.  If I had not found the Goat Brie, I would replace the cheese with a really mild chevre or any soft non-veined French cheese.
1 package of pre-rolled polenta (looks like a big sausage tube with polenta in it...can get at Trader Joes)
1 piece applewood smoked bacol or 3T. olive oil
1tsp sea salt
2 tomatoes: halved and fired on grill and then diced
10 slivers of goat brie
1/4 cup of chopped basil
drizzle of balsamic

Fry your piece of bacon and save the grease.  Heat.  Cut the polenta into 1/2 inch slices and fry in bacon fat until golden each side.
Heat the oven to 400.  In a stoneware baking pan, place the fired/diced tomatoes.  Place the polenta rounds on top.  Place a slice of goat brie on each polenta.  Sprinkle your basil and then drizzle your balsamic.  Sprinkle sea salt.
Cook in oven at 400 for 15minutes. Enjoy!
