Gnudi are gnocchi made with noodle dough...you can make them yourself with a great basic recipe from Giada Delaurentis's website or you can buy them at places like Whole Foods.
1 bag Gnudi
3cloves crushed garlic
1/3 cup diced kalamata olives
1 diced tomato
1 can artichoke hearts in water diced
2/3 cup chick broth
1/3 cup white wine
1T. capers
2. Anchovies
3T. Olive oil
1 cup mussels (out of shell)
1/3 cup parmesan
Cook Gnudi: Boil water and boil gnudi for 4-5 minutes, drain.
Sauce: Add olive oil to a medium sauce pan and heat. Add garlic and mussels for 1 minute. Add olives, tomato and artichoke hearts and simmer for 2 minutes. Add anchovies, capers, wine, and chicken broth and simmer for 5-7 minutes. Add parmesan. Serve over your Gnudi!
