1 cup shelled and salted edamames
1 tsp. ginger paste
2 chopped scallions
1/4 cup crushed peanuts
1/4 cup diced red bell pepper
1/4 cup cilantro, chopped
dressing:
1/4c. veggie oil
1/4c. white vinegar
2T. sweet plum sauce
1tsp. sriracha
1tsp. honey
Dressing: whisk ingredients until well incorporated
Toss together the rest of the ingredients and serve over a bed of greens. Great with previously mentioned yummy tuna thing.
