Ground bison is fabulous...very flavorful on it's own. Plop it in a meatloaf and then on your favorite foccacia roll, however, and you may have some of the finest stuff around.
1lb ground bison
1tsp salt
1tsp pepper
1tsp cayenne
1/2 tsp cumin
1 diced tomato
1/2 diced onion
2 large cloves crushed garlic
2 pieces of applewood smoked bacon, cooked and in little bits
1 egg
2/3 c. panko crumbs
1/4 cup good bbq sauce
1/4 cup chopped parsley
1cup shredded swiss or guyere
Heat oven to 400.
In a large mixing bowel add bison, seasonings, onion, tomato, garlic, and bacon and incorporate with your hands. Add egg and bread crumbs followed by bbq and parsley. Mix thoroughly and should become a big ball. Place in a 7x9 or loaf pan and top with cheese. Bake for 25 minutes.
I think serving this with anything from a nice black bean salad to fried onion straws would be pretty fantastic. Beer is a must as an accompaniment. Dark Beer.
