the wild west...camping in style.

So, I just returned from a week whitewater rafting trip on the Main Salmon River in Idaho...amazing.  But I realized that there is a paucity of info and recipes out there outlining great camping food that is easy to transport. Here are the key things.
1. Get some dry ice and place chunks of it in gallon size ziplocks and line the bottom of the cooler. Next add ice.  In this order, place your food: meat-->eggs/cheese-->veggies/fruit.  Put the beer in a separate cooler :)
2. Plan ahead...if you plan a few smart meals where you use every little bit of what you bring for a variety of things you will be well fed and happy while camping.
3. Always pack your dry stuff in a dry bag...soggy stuff sucks
4. cookware...mostly you don't need much but a good cast iron pan and/or pot will withstand your firepit and washes out easily with rocks, dirt, and a little river water.

So...try this:
1 pound pulled pork/carnitas from the freezer or premade area of your grocery store
3 drops of hickory smoke
Emerils seasoning (about 2T.)
1/2 onion
3T. guajillo or other mexican pepper in oil (available in mex section)
1 tomato
1 avocado
dry cilantro or a little jar of cilantro paste to taste.
large flour tortillas

In a gallon size ziplock, combine the pork, hickory smoke and emerils seasoning and pack in your cooler until ready to cook.
When at campsite: In a cast iron pan, add guajillos and dice your onion/ add cilantro.  Cook until onions are translucent.  Add to the pulled pork and shake it up.  Get your tortillas out and quickly place in heated pan for a few seconds until soft and foldable.  Add the pork, diced tomato, avocado slices and a little cheese.  Roll your burrito and then cover in tin foil.  Place back in your heated skillet and cook until golden.  Beans can be added to this with more cilantro on the side if  you desire.
The leftovers can be mixed with eggs in the am!
