spicy thai beef salad

Boston lettuce head: chopped

2 flank steaks

1/4c soy sauce

1/4c brown sugar



1cup snap peas cut into slivers

1cup shredded carrot

1cup edamame

1/2 cup chow mein noodles

1/2 cup cashews

1/4 cup chopped cilantro



Dressing

1/4c veggie oil

3T. sesame oil

1/3 c. white vinegar

1/4c. soy sauce

2T. sriracha

1/4c. simple syrup

1/2 tsp. ginger paste



Marinade beef in soy and brown sugar (preferably overnight).  Grill to your preference and slice very thin against the grain. Add to a bowel with snap peas, carrots, cilantro, chow mein noodles, cashews, and edamame.

Mix Dressing ingredients and whisk until incorporated.  Toss with the beef mixture.  If you have them hanging around, bean sprouts on top look lovely

Serve over a bed of chopped lettuce...Voila!

Goes well with a nice cold Singha or other light Asian beer.
