
I adapted this from a cookbook I got while in New Zealand so it is a little less of a fat bomb than their recipe. It is simple, fast, and omg good.
1 box mini shells or orchiette pasta, cooked al dente
1/4 c. evoo
3 cloves crushed garlic
1/2 onion diced
4 slices thickly cut good bacon (I have also substituted chorizo and it is fab)
1 cup frozen or fresh peas
1/2 cup fat free 1/2n1/2
1/3 cup real 1/2n1/2
crumbled gorgonzola cheese (probably a little more than 1/2 cup)
1/4 c chopped parsely
Cook bacon in microwave until crispy and crumble/set aside. In a large saute pan, heat oil, garlic and onion and saute until translucent. Add bacon and toss. Add the 2 half n halfs to the mixture and simmer for 5 minutes. Slowly add the gorgonzola while stirring until the sauce is an alfredo consistency. Add peas and top with parsely. Toss in your pasta prior to serving.
Pairs well with a sauvignon blanc to cut the richness a bit. Also recommend a nice light salad (arugula and lemon dressing, etc.)
