fire roasted stuffed mini peppers

Tried this out on the campfire last weekend and seemed to go over well!

Package of mini-peppers (basically bell peppers that were picked early), gutted and tops off
1/3 cup good chevre
1 shallot finely diced
handful of cilantro finely chopped
3 green olives chopped
3 pieces of turkey bacon cut into 2 inch pieces
pecans

Mix chevre, shallot, cilantro and olives until well incorporated.  place piece of turkey bacon on the bottom of each little pepper then spoon in the cheese. Top with a pecan.  place on skewers over the campfire until the red peppers are well toasted and charred.  Pop those puppies in yo' mouth!
