sweet and spicy chickpea salad

Ok, so we went to this restaurant in Cincinnati called Cumin and it was AMAZING. Highly highly recommend it.  They have a signature salad that involves chickpeas, potato, onion, fried chips of wonton and cilantro with a sweet curry dressing that is killer. Killer, I say.  I modified it so that it doesn't give me a heart attack...give it a whirl.  FYI, it might be as good as Curry Rice Salad (see march
post)...
16 oz. can chickpeas, rinsed
2 red potato (medium)
2 green onions, finely chopped
1/4 cup chopped cilantro
2 cups chopped arugula or boston lettuce
1 cup of fried wonton strips

Dressing
2T. satay sauce or thai peanut sauce
2 T. mango puree
1/4 cup veg oil
1/4 cup rice vinegar
1/2 tsp yellow curry powder
2T. honey
1 sprig of mint, pulverize the crap out of it

Use a mandolin or a food processor to slice potatoes very thinly, then bake at 400 until cooked with a little salt and pepper.  Allow to cool, then mix chickpeas, potato, onion, and cilantro together.  Lay down a bed of lettuce in individual bowls. Scoop some chickpea mixture on top. Sprinkle the wontons.  Whisk together all dressing ingredients and spoon over the top.
I think it would probably also go well with a little greek plain yogurt on the side. Or even better, samosas...
