My week has been crappy...if you want to know. So I have spent most of my meals eating caprese salad because it is easy to make and the grape tomatoes are really awesome right now.
So:
2 pints grape tomatoes, halved
6-8oz. mozzarella pearls
15 sprigs of fresh basil, finely chopped

Dressing
1/4 cup balsamic
1/4 cup good olive oil
1/2 tsp sea salt
1/2 tsp fresh ground pepper
1/4 tsp crushed sage
1/2 tsp orange zest or a splash of OJ
I think the directions are self explanatory. Variations of the theme: try some fresh salad sprouts on top or a few chopped kalamatas if you have them. I also had a lovely loaf of sunflower grain bread that I tore off a chunk with the salad.
Ok, that is all I have energy for at the moment...will be back once reincarnated as a motivated chef.
