curry rice salad...shhh

This is an adapted recipe from my med school buddy Eli...there is NO ONE in the world who is human and doesn't like it.  No One. It makes women swoon, men weep, babies drool...


2 boxes uncle bens rice pilaf cooked per package directions and chilled
1 bunch scallions
1 12 oz bag frozen shelled edamame
2 bell peppers (colorful!)
1 package craisins
1 can honey roasted peanuts
1 can slivered water chestnuts

Dressing:
1/3 c. canola oil
1/3 c. honey
1/3c. rice vinegar
2T. curry powder (1T. is fine if curry ain't your thang)

Toss together all salad ingredients.  Mix the dressing separately and whisk until incorporated well.  Toss with the other ingredients! Keep away from my sister...she will eat the entire bowl.
