This is by request of my mother...it makes a lot of salad as written but is great for a big dinner party.
1 lb yellow beet
1 lb red beet
1 bunch arugula
1 bunch scallions
1 log of honey goat cheese
1/4 cup of crushed hazelnuts
Dressing
1/3 c. balsamico
1/4c. Evoo
2T. honey (really good if wildflower honey)
1/8 tsp. cayenne (just a pinch)
4 large basil leaves
2T. sparkling wine (optional)
salt/pep to taste
Boil the beets until al dente. I personally like them chopped in thin rounds. Wash arugula, chop scallions finely. Toss all of the above together. Next crumble up the goat cheese and toss it in and add hazelnuts.
For the dressing, add balsamic, oil, and honey and whisk. Add about tsp salt, couple shakes of pepper and cayenne to a mortar and pestle and crush the crap out of the basil until muddled. Add to dressing, stir. Add champagne if you desire. Toss with the beets.
