1 medium butternut squash, peeled and cubed
1 onion
2T. garlic
2T. olive oil
1T. rosemary
1tsp. thyme
1/4 cup fresh parsely
4cups veggie broth
tsp. salt, tsp. pepper
1c. fat free 1/2 n 1/2
optional: salt pork cracklin' (crumbled)
optional: toasted sourdough crouton
sourdough cut into 2 inch cubes, toss with several T. olive oil, 1tsp sea salt, and 2T. parmesan, toasted at 400F for 10 minutes
Soup: Bake butternut squash until tender at 450 in the oven...this can be done in advance...gives a little more of a roasted flavor. In separate deep dutch oven, saute diced onion and garlic in olive oil. Add rosemary, parsley, and thyme, then the butternut squash. Add the broth and simmer for 20minutes. In small batches, place in food processor and blend until smooth. Add back to pot and blend in salt, pepper. and fat free 1/2 n 1/2. This is great by itself, but if you are a cheese lover, grate a little parm on top, or, if a meat lover, toss a couple of salt pork cracklins or bacon bits on top for an extra treat. The croutons are might good too if you would like.
If you need some booze with this one, I would go for a non-oaky Chardonnay.

This sounds fantastic! I made butternut squash soup on Tuesday this week too! Mine was totally different with some sweet potato cardamom and cumin... will try your version sometime! Yum!
